  • How to Cook
  • 1. Cut the abalone into paper-thin slices.
    2. Warm the water to 70°C, add bonito flakes (large), kelp, soy sauce, mirin, sake, rice vinegar and allow to simmer in 70°C for 1 hour.
    3. Strain and add sugar to the broth, let it simmer till thicken, about 12 minutes.
    4. Serve abalone chilled with soft tofu and sweet bonito broth.

    • Australian abalone 1 piece
    • Bonito flakes (large) 2 handfuls
    • Dried kelp 1/2 piece
    • Water 2 cups
    • Bonito soya sauce 1/2 tablespoon
    • Mirin 3 tablespoons
    • Sake 75ml
    • Sugar 1/2 tablespoon
    • Rice vinegar 1 tablespoon
    • Japanese leek amount for garnish
    • Fine bonito flakes 2 handfuls for garnish
    • Japanese soft tofu suitable amount
